Pumpkin in Coconut Milk....Easiest Thai dessert





Thai people love to eat sweet pumpkin in coconut milk as a dessert. It is one of the easiest Thai deserts to prepare and never disappoints.
Ingredients

1. One and a half cups of coconut milk
2. Two cups of cut pumpkin (chunks or sticks)
3. A little bit of salt
4. Pandanus (if you like)
5. Half cup of palm sugar




Direction
1. Heat the coconut milk in small pot until boiling
2. Add pumpkin and cook until tender (about 10 minutes)
3. Add palm sugar and salt

Tip: Make sure the pumpkin is really tender before adding sugar.
